I love a good sheet pan meal. They're easy to make, and in less than an hour you have a delicious, healthy meal for the whole fam! These Sheet Pan Spicy Meatballs are full of flavor, and go well with most vegetables! For this recipe I used a mixture of onions, green peppers, and sweet potatoes, but feel free to switch it up! I also like using two pans sometimes so I can squeeze in extra vegetables! Plus this meal is grain-free & dairy-free which makes it perfect for anyone who is on Whole30 or a Paleo diet.

Ingredients & Notes
Meatballs
- 1 lb. Ground Beef
- 2 Eggs
- ½ Sweet Onion Diced Small
- ½ Teaspoon Cayenne Pepper
- ½ Teaspoon Paprika
- 1 Teaspoon Salt
Sweet Potatoes
- 2 Medium sized Sweet Potatoes, Cut into cubes
- 1 Teaspoon Salt
- ¼ Tsp. Cayenne Pepper
- 1 Tbs. Avocado Oil Can substitute with Coconut Oil or Olive Oil.
Peppers + Onions
- 1 Sweet Onion Diced
- 2 Green Peppers
- 1 Tablespoon Avocado Oil Coconut Oil/Olive Oil
- 1 Teaspoon Salt
- ½ Teaspoon Black Pepper
Step by Step Instructions
Preparing the Meatballs
- For the meatballs, add all ingredients into a mixing bowl. Using a large spoon to thoroughly mix everything together. Add 1 ½ inch balls onto your pan until you use up the whole mixture.
Preparing the Vegetables
- For sweet potatoes, dice into small cubes then toss with the cayenne pepper, salt, and oil. Add to your baking sheet.
- For onions and peppers, dice them into small pieces. Toss in oil, salt and pepper. Add to your baking sheet.
- Roast for about 30 minutes. (Stir vegetables at the halfway point.)
How to store & reheat leftovers
You can store leftovers in an air tight glass container for up to five days in the refrigerator. You can also place leftovers in the freezer for longer storage! (Perfect for a rainy day.) Make sure your container is freezer safe! To reheat, just add it to the stovetop in a pan on medium/low heat. Stir until it’s warm. You can also reheat in the microwave or oven!
